First time you need to know about spring roll, in asia, there is so many kinds of these food, like in Malaysia and Indonesia, they call this with the name "lumpia", but this is not a big problem, because almost all of them use the same ingredients, ok, enought for the story of these food ... now, i will try to write the Vietnamese Spring Rolls recipes for you.
INGREDIENTS:
2 ounces rice vermicelli
8 rice wrappers (8.5 inch diameter)
8 large cooked shrimp, peeled and cut in half
1 ¼ tbsps chopped fresh Thai basil
3 tbsps chopped fresh mint leaves
3 tbsps chopped fresh cilantro
2 leaves lettuce, chopped
4 tsps fish sauce
½ tsp garlic chili sauce
¼ cup water
2 tbsps fresh lime juice
1 clove garlic, minced
2 tbsps white sugar
3 tbsps hoisin sauce
1 tsp finely chopped peanuts
DIRECTIONS:
1. Fill a large bowl with warm water. Dip one wrapper into the hot water for 1 second to soften. Lie wrapper. In a row on the central portion, place 2 shrimp halves, a handful of vermicelli, basil, mint, cilantro and lettuce, leaving about 2 inches on each side uncovered. Fold discovered sides inward, then Tightly roll wrapper, from the end the lettuce. Repeat with remaining ingredients.
2. In a small bowl, mix the fish sauce, water, lemon juice, garlic, sugar and chili sauce.
3. In another small bowl, mix the hoisin sauce and peanuts.
4. Serve rolled spring rolls with mixed fish sauce and hoisin sauce.
I love lumpia and Banh Phong Lanh (pound cakes) every time I visit Vietnam, are my favorite dishes, from street food vendors.
