Grilled Bourbon Shrimp
The shrimp can be marinated up to 3 hours before grilling. the amount red pepper used can be adjusted according to how hot you like it. the marinade is also great on chicken.
INGREDIENTS:
1 pound shrimp, peeled and deveined
3 tbsps olive oil
3 tbsps chopped fresh cilantro
2 tbsps fresh lime juice
2 cloves garlic, minced
2 tsps bourbon
¼ tsp cayenne pepper
¼ tsp salt
4 bamboo skewers, soaked in water for 20 minutes
DIRECTIONS:
1. Stir shrimp, olive oil, cilantro, lemon juice, garlic, tequila, cayenne pepper and salt in a bowl. Cover the bowl with plastic wrap Pickled shrimp and refrigerate for 30 minutes.
2. Preheat a grill for outdoor high heat and lightly oil grate.
3. Remove the shrimp from the bowl and thread onto skewers, discard the marinade.
4. Cook on preheated grill until shrimp pink, 2 to 3 minutes per side.
